Chinese Recipe:Chinese Chicken Salad w/ Rice Sticks

A recipe for Chinese chicken salad made with deep-fried chicken breasts and served with rice sticks.
Ingredients:
- 1 head lettuce
- 4 scallions
- 1/3 bunch cilantro
- 1 to 2 carrots, shredded
- 1 c. peanuts, chopped
- 4 boned, skinned chicken breasts
- 1/2 pkg. Chinese rice stick noodles
- Cooking oil
- Sesame seeds
Dressing:
- Sesame oil
- Vinegar
- Hot Chinese mustard
- Five spice powder
- Hoisin sauce
Directions:
- Wash and coarsely chop the lettuce, scallions and cilantro. Set aside.
- Place the oil in a wok. Fry the rice stick noodles in small quantities until they puff up. Drain and set aside.
- Slice the chicken and coat with cornstarch. Fry the chicken.
- In a small bowl, combine the ingredients for the dressing.
- To assemble, combine the vegetables, the cooked chicken and the fried rice stick noodles. Add the dressing last. Coat to taste. Toss with sesame seeds.
