Chinese Recipe : Bitter Melon Salad

Ingredients:
A:
- 2 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tbsp thick soy sauce
- A little mustard
Directions:
- Mix 'A".
- Cut the bitter melon lengthwise into 4 sections. Remove and discard the core. Cut each section crosswise into very thin slices. Put in cold water and refrigerate for 10 hours until they have a transparent appearance. Remove and drain. Arrange on plate and use 'A' as a dip.
Note:
- Make mustard by mixing mustard powder with some cold water into paste. Let stand for 10 minutes.
- This is a very refreshing dish in the summer.
