Chinese Salad Recipe : Bean Sprouts Salad

This is a delicious salad that has to be eaten to be believed. IF the bean sprouts used are home grown, be sure to remove roots and wash thoroughly before cooking.
Serves 4:
- ½ lb bean sprouts, roots removed, washed and drained
- 1 tsp salt
- 1 tbsp vinegar
- 1 slice ham
- ½ medium cucumber
Dressing:
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- Mustard to taste
- A dash of MSG
Directions:
- Blanch bean sprouts in boiling water, to which vinegar and salt had first been added, then cool quickly by placing in cold water, then drain.
- Cut the ham and cucumber into fairly thin strips.
- Combine ingredients for dressing.
- Place the bean sprouts on a large plate and top with the stripped ham and cucumber. Pour on the dressing immediately before serving and eating.
