Chinese Recipe : Stirfried Chicken Special

Ingredients:
- 1 chicken breast (diced)
- 1 cup cashew buts (blanched and deep fried till golden brown)
- ½ cup bamboo shoots (diced)
- ½ cup dried Chinese mushrooms (soaked and diced)
- ¼ cup stock
- Oil for deep frying
- 2 slices fresh ginger (finely shredded)
Seasoning ingredients:
- 2 tsp cornstarch
- 1 tbsp sherry
- ¼ tsp pepper
- ¼ tsp sugar
- ¼ tsp salt
- 1 tsp soy sauce
Directions:
- Mix diced chicken well with seasoning ingredients. Set aside for 20 minutes.
- Heat oil and stir fry ginger. Add seasoned chicken and stir fry for about 2 minutes.
- Add the diced bamboo shoots and mushrooms. Stir in the stock and cook, covered, 2 to 3 minutes.
- Stir in cashew nuts, only to heat through. Serve at once.
