Famous Authentic Chinese Recipe - Crisp-skin Stuffed Chicken Wings

Ingredients:

  • 12 chicken wings
  • Adequate scallop shreds, liver sausage pellets, water chestnut pellets, black mushroom pellets and thoroughly soaked glutinous rice
  • 120g bean sprouts
  • 1 orange

Seasonings:

A:

  • Adequate amount each of oil, Shaoshing wine, sugar, salt, MSG, pepper and starch
  • 1 cup coating paste

Directions:

  1. Using the parts of the chicken wings which are linked to their tips, pluck fine hair away, scald them in boiling water, scoop them out quickly, pull bones out and apply dark soy sauce and pepper thinly and evenly onto them.
  2. Put the remaining ingredients in a bowl and add the A seasonings to mix well.
  3. Stuff the (2) mixture separately into the chicken wings of (2) and seal them with starch of toothpicks.
  4. Heating oil, put the stuffed chicken wings of (3) in, reduce the fire to mild heat, deep fry them over mild heat until the ingredients are cooked, raise the fire to high heat, deepfry them until golden yellow, remove oil and place the wings in a plate.
  5. Wash bean sprouts clean, drain, coat them in coating paste, deep fry them and garnish the wings around with them together with fresh orange slices and red and green cherries.
