Chinese Recipe : Baked Chicken Wings with Parsley

Ingredients:
- 4 chicken wings, about 1 lbs
- 1 oz shallots
- ½ oz garlic
- 2 slices ginger
- 2 oz parsley
- 5 cups oil for deep frying
- 2 extra tbsp sesame oil for brushing
Marinade:
- 1 tbsp ginger juice
- 1 tbsp wine
- 2 ½ tbsp light soy sauce
- 1 tbsp sugar
- ½ tsp chicken powder
- 1/8 tsp pepper
- 1 tsp sesame oil
Directions:
- Wash, dry and place the chicken wings on a platter
- Mince the shallots, garlic and ginger. Wash and mince the parsley.
- Put all the minced ingredients into a small bowl then add the marinade and stir until the sugar dissolves. Adjust the seasoning according to taste and pour over the chicken wings to mix thoroughly. Leave aside for 4 hours.
- Heat a wok or a deep fryer and bring the oil to boil. Slide in the wings to deep fry for 2 to 3 minutes or until golden brown. Remove and drain.
- Put the chicken wings on to a greased rack over a baking tray and place in a preheated oven of 420 degree Fahrenheit (Gas Mark 7) to bake for 5 minutes. Remove and brush with extra sesame oil. Bake for a further 5 minutes. Dish and serve hot or cold.
