Chinese Recipe : Sweet and Sour Pork 2

Serves 6
Ingredients:
- 1 1/2 lbs. boneless pork center loin, diced
- 1 tsp. sesame oil
- 1 tbsp. grated fresh ginger root
- 3 minced garlic cloves
- 1/2 cup sliced green onions
- 1/2 cup carrots, peeled and sliced
- 1 red bell pepper, diced
- 1/4 lb. snow peas, cleaned
- 1 1/2 cups pineapple juice
- 4 tsps. cornstarch
- 4 tbsps. rice vinegar
- 4 tbsps. soy sauce
- 3 1/2 tbsps. brown sugar
Directions:
- In wok, heat sesame oil over high heat.
- Stir-fry ginger, garlic, green onions, carrots and red pepper for 3-5 minutes, until vegetables are crisp-tender.
- Add pork and stir-fry for 3 minutes. Add snow peas and pineapple juice; heat through.
- In small bowl stir together cornstarch, vinegar, soy sauce and brown sugar; stir this mixture into wok and cook and stir until mixture comes to a boil. Serve hot.
