Chinese Recipe : Stir Fried Pork with Noodles

This is a Western Chinese recipe
Ingredients:
- 1 ½ oz cellophane noodles
- ¼ cup oil
- ½ lb ground pork
- 3 scallions, chopped
- 1 tbsp hot bean sauce
- 2 tbsps soy sauce
- 1 tbsp dry sherry
- ½ tsp sugar
- ½ cup water
Directions:
- Soak the noodles in lukewarm water for 15 minutes. Drain and cut into 3 inch pieces.
- Heat the oil in a pan, add the pork and stir fry over high heat until lightly browned.
- Add the noodles, stir-fry for a few seconds, then add the remaining ingredients. Bring to the boil and simmer until all the liquid has evaporated. Serve hot.
Note: ½ tsp of Tabasco sauce or 1 tbsp chopped red chili pepper may be substituted for the hot soy bean paste (sauce).
