Serves 4
Ingredients:
1 lb spareribs
3 green peppers
½ oz. fermented black beans
1/3 oz scallion, finely chopped
1/6 oz. ginger
2 cloves garlic
1 cayenne pepper
Seasoning:
½ tsp salt
1 tbsp sugar
1 ½ tbsp rice wine
1 tbsp vinegar
1 tbsp soy sauce
1 tbsp oyster sauce
½ tsp MSG
1 cup soup stock
Sesame oil, soy sauce, cooking oil
Directions:
1. Chop the spareribs into bite size and coat with 1 tbsp of soy sauce. Cut the green pepper into half, remove the seeds and cut into 3 to 4 pieces. Chop the fermented black beans, scallion and ginger finely. Crush the garlic and chop finely. Remove the seeds from cayenne pepper and cut into thin rings.
2. In a bowl, combine the scallion, ginger, garlic, fermented black beans, cayenne pepper and the seasoning ingredients. Set aside.
3. Parboil the green pepper.
4. Pour 2 cups of oil in a wok and heat to 356°F or until the oil begins to smoke. Drop the spareribs all at once and fry. Stir fry occasionally and remove when the spareribs are browned. Drain the oil.
5. Pour 2 tbsp of oil into a wok. Add the seasoning prepared in step 2. When they are cooked, add the spareribs. Cover and simmer for 4 to 5 minutes.
6. When the liquid is reduced and the spareribs thoroughly cooked, add the green pepper. Pour in 1 tsp of sesame oil, stir fry quickly and serve.
