Chinese Recipe : Shredded Pork with Sweet Bean Sauce

Serves 4

Ingredients:

  • 300g Pork Loin
  • 145g Beijing Scallion (a kind of large scallion)
  • 1.3 tsp Sweet Bean Paste
  • 1 tbsp Stock
  • 1 tsp Sugar

Seasoning:

  • 2 tbsp Water
  • 1 tbsp Wine
  • ½ tbsp Soy Sauce
  • 1 tbsp Cornstarch
  • 1 tsp Oil

Directions:

  1. Shred the pork, marinate with the seasoning for about 30 minutes; finely shred the scallion and put it on the serving plate.
  2. Heat the wok, add 3 cups of oil and heat until at 120*C, then add shredded pork, stir to separate. When the pork turns white, remove and set aside. (* For saving oil, you can use less oil and stir fry the pork until 70% done.)
  3. Use 2 Tablespoons of oil to stir fry the sweet bean paste and sugar until fragrant. Then add the pork and stock, remove when done.
  4. Put the pork on the scallion and serve.
