Chinese Recipe : Shredded Pork with Sweet Bean Sauce

Serves 4
Ingredients:
- 300g Pork Loin
- 145g Beijing Scallion (a kind of large scallion)
- 1.3 tsp Sweet Bean Paste
- 1 tbsp Stock
- 1 tsp Sugar
Seasoning:
- 2 tbsp Water
- 1 tbsp Wine
- ½ tbsp Soy Sauce
- 1 tbsp Cornstarch
- 1 tsp Oil
Directions:
- Shred the pork, marinate with the seasoning for about 30 minutes; finely shred the scallion and put it on the serving plate.
- Heat the wok, add 3 cups of oil and heat until at 120*C, then add shredded pork, stir to separate. When the pork turns white, remove and set aside. (* For saving oil, you can use less oil and stir fry the pork until 70% done.)
- Use 2 Tablespoons of oil to stir fry the sweet bean paste and sugar until fragrant. Then add the pork and stock, remove when done.
- Put the pork on the scallion and serve.
