Chinese Recipe : Pork Tenderloin Stir-Fry

Serves 4

Ingredients:

  • 1 lb. pork tenderloin
  • 1 tbsp. vegetable oil
  • 1/2 tsp. salt
  • 1 small onion, sliced, separated into rings
  • 3 small zucchini, cut into thin slices
  • 1 medium green pepper, cut into thin strips
  • 3 medium carrots, cut into thin slices
  • 1 tbsp. soy sauce
  • 1 clove garlic, minced

Directions:

  1. Cut pork tenderloin into 1/4-inch thick slices.
  2. Quickly brown pork slices, one-half at a time, in hot oil in a wok or large skillet, stirring constantly. Remove from wok. Sprinkle pork with salt.
  3. Reduce heat; add onion, zucchini, green pepper, carrots, soy sauce and garlic; mix well. Cook over medium heat 5-6 minutes, stirring occasionally.
  4. Return pork to wok and heat thoroughly.
