Chinese Recipe : Kidney Straws
|

Ingredients:
- 1 onion, chopped fine
- 1 tablespoon oil
- 1 pound, pork kidneys
- 2 cups water
- 1 teaspoon sesame seed oil
- 1 teaspoon soy sauce
- 1 teaspoon lemon juice
- 20 rounds toast
Directions:
- Wash the kidney well, remove the membranes, white veins and core and soak in water for one hour, changing the water once or twice.
- Place in a pan with 2 cups water, bring to a boil and boil for 5 minutes.
- Remove from the water and drain.
- Heat a pan with 1 tablespoon oil and when hot, saute the onion till it browns.
- Remove and drain well.
- Pass the kidney through a mincer and then mix with the onion.
- Mix the sesame seed oil, soy sauce and lemon juice, and add to the kidney.
- Spread on toast rounds.
- Serve hot.
