Cut the pork, through the skin and fat, into 1 ½ inch squares. Place in a bowl with the sherry and soy sauce and leave to marinate for 10 minutes. Drain, reserving the marinade. Mix the pork with the beaten eggs.
Melt the lard in a deep pan. Add the pork mixture and fry until golden. Lift out with a perforated spoon and place in a large heatproof bowl.
Pour over the marinade together with the sugar and five spice powder. Mix well, then place in a steamer; steam for 1 hour.
Place on a bed of lettuce and sprinkle with the sesame seed oil. Top with the garnish.
