Chinese Recipe : Braised Chinese Sausage with Winter Melon

This is a Southern Chinese recipe

Ingredients:

  • 1 tbsp oil
  • 2 Chinese sausages, diced, or ½ cup diced Smithfield ham
  • 4 chicken wings cut into ½ inch pieces
  • 4 small dried Chinese mushrooms, soaked for 20 minutes, drained, stemmed and quartered
  • 1 scallion, cut into ½ inch pieces
  • 1 tbsp dry sherry
  • 1 tsp salt
  • 1 cup water
  • 1 x ½ lb can winter melon, peeled and cut into 1 inch cubes
  • 1 tsp cornstarch, dissolved in 1 tbsp water

Directions:

  1. Heat the oil in a pan. Add the sausage or ham and fry for 2 seconds.
  2. Add the chicken wings and stir fry until lightly colored.
  3. Add the mushrooms and scallion. Stir fry for 1 minute.
  4. Add the sherry, salt and water. Bring to the boil, cover and simmer for 15 to 20 minutes or until the chicken is tender.
  5. Add the winter melon. When the mixture returns to the boil, stir in the cornstarch paste and cook, stirring, until thickened. Serve hot.
