Chinese Recipe : Braised Chinese Sausage with Winter Melon

This is a Southern Chinese recipe
Ingredients:
- 1 tbsp oil
- 2 Chinese sausages, diced, or ½ cup diced Smithfield ham
- 4 chicken wings cut into ½ inch pieces
- 4 small dried Chinese mushrooms, soaked for 20 minutes, drained, stemmed and quartered
- 1 scallion, cut into ½ inch pieces
- 1 tbsp dry sherry
- 1 tsp salt
- 1 cup water
- 1 x ½ lb can winter melon, peeled and cut into 1 inch cubes
- 1 tsp cornstarch, dissolved in 1 tbsp water
Directions:
- Heat the oil in a pan. Add the sausage or ham and fry for 2 seconds.
- Add the chicken wings and stir fry until lightly colored.
- Add the mushrooms and scallion. Stir fry for 1 minute.
- Add the sherry, salt and water. Bring to the boil, cover and simmer for 15 to 20 minutes or until the chicken is tender.
- Add the winter melon. When the mixture returns to the boil, stir in the cornstarch paste and cook, stirring, until thickened. Serve hot.
