Chinese Recipe : Fried Noodles with Assorted Meat


  • 5 small bowls cooked noodles (individual servings)
  • ¼ lbs sliced pork, dredged with 1 tsp soy sauce and 1 tsp cornstarch
  • ¼ lb sliced chicken, dredged with ½ tsp salt and ½ tsp cornstarch
  • 2 abalone, sliced
  • 5 dried mushrooms, soaked and sliced
  • ¼ lb bamboo shoot, sliced
  • 25 shrimps (or 4 sliced prawns), dredged with 1 tsp wine and 1 tsp cornstarch
  • 40 snow peas, strung and parboiled
  • ¼ lb ham, sliced
  • 7 tbsp oil
  • 4 cups water or broth
  • 2 tbsp wine
  • 2 tbsp soy sauce
  • 1 tsp salt


  1. Heat 3 tbsp oil and fry noodles in one big pancake until both sides turn light brown. Remove to a plate.
  2. Heat 4 tbsp oil and fry pork, chicken, abalone, mushrooms, bamboo shoot, shrimp, snow peas, and ham.
  3. Add water (or broth) and seasonings. Bring to boil and thicken with cornstarch.
  4. Pour mixture over fried noodles and serve hot.

This recipe serves 4 to 6 persons.
