Famous Authentic Chinese Recipe : Sweet and Sour Yellow Croaker

Ingredients:

  • 1 yellow croaker (about 800g)
  • 40g shelled shrimps
  • 40g sea cucumber
  • 20g fresh tomato
  • 1 tsp green soy bean

Seasonings:

  • 20g tomato ketchup
  • 1 tsp yellow wine
  • A dash each of light soy sauce, sugar, salt, edible red water,
  • white vinegar and pepper.
  • 120g starch
  • 120g clear soup
  • 960g peanut oil (160g consumed)
  • 1 chicken egg white

Directions:

  1. Remove scales and entrails from the yellow croaker, wash it clean, lay it flat on the chopping board, make slanting cuts on both sides, cut tail off, apply salt, pepper and starch solution in turn onto it and coat it by rolling it in dry water chestnut starch.
  2. Mix salt, soy sauce, sugar, vinegar, wine, tomato ketchup, edible red water and dry starch well in a small bowl; beat egg white well, mix it well with starch solution and salt and dip shelled shrimps in the mixture to coat them.
  3. Heat oil over high heat until 70 percent hot, deep fry the yellow croaker until cooked and yellow, take it out, filter oil away and place it in a plate.
  4. Leaving a dash of oil in the pot, put coated shelled shrimps in, add sea cucumber, green soy bean and tomato, sprinkle wine in, put the seasoning mixture of (2) in, stir them well and pour the new mixture over the fish of (3) for serving.
