Chinese Recipe : Steamed Bass with Mushrooms

Ingredients:
- 1.4lb (600g) sea bass (or other ocean fish)
- 2 black mushrooms
- 1 Tbsp finely shredded lean pork
- 1/8 cup shredded scallion
- 2 Tbsp finely shredded ginger
Directions:
- Soak mushrooms until soft, remove stems, cut into fine shreds.
- Wash fish and dry thoroughly. Evenly coat fish inside and outside with dash of pepper and 1 tsp of corn starch. Spread ginger on top of fish.
- Mix mushrooms, pork, 1/4 tsp corn starch and 2 Tbsp oil and spread over the whole fish.
- Steam for 9 minutes or until cooked. Drain off excess water, add soy sauce and oil to taste, sprinkle scallion on top.
