Chinese Recipe : Fish with Beancurd in Hot and Sour Sauce

This is an Eastern Chinese recipe
Ingredients:
- 1 lb. fish fillets (cod or halibut), cut into 2 x 1 inch pieces
- 3 tbsps soy sauce
- ¼ cup oil
- 2-3 scallions, finely chopped
- 2-3 slices ginger root, finely chopped
- 1 garlic clove, minced
- 2 cakes bean curd, each cut into 12 cubes
- 1 tsp salt
- 2 tbsps dry sherry
- 1 tsp sugar
- 1 tbsp chili sauce
- 2 tbsps wine vinegar
- ½ cup water
- Chopped parsley to garnish
Directions:
1. Sprinkle the fish with 1 tbsp of the soy sauce and leave to marinate.
2. Heat 3 tbsps of the oil in a pan. Add the fish pieces and fry until golden. Remove the fish from the pan and set aside.
3. Heat the remaining oil in the pan. Add the scallions, ginger and garlic and fry for a few seconds. Add the sugar, remaining soy sauce, the chili sauce, vinegar and water. Bring to the boil, then simmer for 10 minutes.
4. Serve hot, garnished with chopped parsley.
