Chinese Recipe : Walnut Tea
|
|
Ingredients:
- 2 cups shelled walnuts
- ½ cup uncooked rice, soaked in water overnight
- 6 Chinese red dates, boiled, skinned and seeded
- 2 cups sugar
- 7 cups water
Directions:
- Blanch walnuts in boiling water for 10 minutes and remove skins.
- Grind walnuts, rice an dates together in a mortar or mixer, adding 1 cup water a little at a time while grinding, so that result will be a paste.
- Add 3 cups water to paste, mix well, and squeeze out liquid through a muslin bag.
- Add remaining 3 cups water and 2 cups sugar to this liquid and cook in deep saucepan for 10 minutes, stirring constantly. Serve hot in tea cups.
Note: Rice flour may be substituted in equivalent amount for rice. Dates may be omitted.
