Chinese Recipe : Coconut Red Bean Pudding

Ingredients:
- 11oz (400g) red beans (red mung beans)
- 1 1/2 cups sugar
- 1 1/4 cups coconut milk
- 3/4 cup condensed, unsweetened milk
- 7 oz (200g) corn starch
- 4 Tbsp high-gluten flour
Directions:
- Wash beans, soak with plenty of cold water for 2 hours, boil until soft, drain and set aside.
- Moisten inside of pudding-cups with water to use as molds.
- Mix coconut milk, condensed milk, corn starch, and flour with a blender.
- Add sugar to 5 cups of water and bring to a boil. Add milk-flour mixture and keep stirring until boiling.
- Add beans and bring to a boil again.
- Pour into pudding-cups. Refrigerate when cool. Serve when pudding hardens.
