Chinese Recipe : Chinese Ravioli

Ingredients for filling:

  • ¼ lbs chicken meat, minced or ground
  • 1 tsp ginger juice
  • ½ tsp salt
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp wine
  • 1 tbsp chopped celery

Ingredients for wrapping:

  • 2 cup flour
  • 1 cup water
  • 1 tsp salt
  • ½ tsp baking powder mixed with 1 tbsp water
  • Cornstarch for rolling dough

Ingredients for sauce:

  • 3 tbsp sugar
  • 2 tbsp soy sauce
  • 1 tbsp wine
  • 1 tbsp ketchup
  • 1 ½ tbsp vinegar
  • ½ tbsp cornstarch
  • ½ cup water

Directions:

  1. Mix all filling ingredients thoroughly in a bowl.
  2. Mix flour, water, salt and baking soda to form dough for wrappings; knead until smooth; and let stand for 30 minutes.
  3. Sprinkle breadboard with cornstarch and roll dough very thin. Cut into 2 ½ inch squares.
  4. Place ½ tsp of filling in center of each square. Fold corners toward center in envelope-style and seal edges with mixture of cornstarch and water.
  5. Heat oil and deep fry ravioli until golden brown.
  6. Mix all sauce ingredients except cornstarch and water. Heat sauce and add mixture of cornstarch and water when it comes to a boil. Bring sauce to a boil once again and serve with ravioli as a dip.
