Chinese Recipe : Stirfried Beef in Oyster Sauce

This is a famous Cantonese dish

Ingredients:

  • 2/3 lb sirloin or top round beef, thinly sliced
  • ½ scallion, chopped finely
  • 1 inch piece fresh ginger, chopped finely
  • 1 tsp baking powder

Mixture A:

  • 1 tbsp cornstarch
  • 2 tbsp oyster sauce
  • 1 tbsp Chinese rice wine or sherry
  • 5 tbsp oil

Directions:

  1. Dust the beef with the baking powder, and let sit for 1 hour. (Baking powder tenderizes the meat). Then coat the beef with Mixture A, and let sit for another hour.
  2. Heat the oil, and stir-fry the scallion and ginger. Add the undrained meat, and stir fry quickly over high heat for 2 minutes.
