Vietnamese Recipe : Crispy Noodles with Sour Pickle

Ingredients:

  • 100g vermicelli noodles, soaked in boiling water for 5 minutes and drained
  • 4 red chilies, thinly sliced
  • 3 shallots, thinly sliced
  • 1 stalk coriander leaves, chopped
  • 1 stalk mint leaves, chopped
  • 20g belacan powder
  • Oil for frying

Sour pickle ingredients:

  • 1 lemon, sliced
  • 4 shallots, sliced
  • ¾ tbsp salt
  • 100ml water
  • 85g palm sugar
  • 50ml white vinegar
  • ¾ tbsp fish sauce

Directions:

  1. Add chilies, shallots, coriander leaves, mint leaves and belacan powder to noodles.
  2. Heat oil in a skillet.
  3. Place 4 to 5 tbsp of noodle mixture in the skillet. Flatten them.
  4. Fry flattened noodle mixture until golden brown or crispy.
  5. Drain of kitchen towel.
  6. To prepare pickle, combine lemon, shallots, salt and water and cook for 10 minutes. Add sugar, vinegar and fish sauce. Mix well and let it thicken.
  7. Serve with crispy noodles.
